Grilled Sweet Potato Wedges with Herb Butter

A simple yet irresistible side dish for your RCS Gas Grill—crispy on the outside, tender inside, with a touch of smoky char and fresh herbs.


Ingredients

  • 2 large sweet potatoes
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley or cilantro, chopped
  • 1 tbsp butter, melted
  • Lemon wedges (for serving)

Instructions

1. Prep the Sweet Potatoes

  • Wash and peel (optional) sweet potatoes.
  • Cut into thick wedges (about 6–8 per potato).
  • Boil in salted water for 5–6 minutes until just tender; drain and pat dry.

2. Season

  • In a bowl, toss wedges with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.

3. Grill

  • Preheat your RCS Gas Grill to medium-high (around 400°F).
  • Place wedges directly on the grill grates.
  • Grill 3–4 minutes per side until lightly charred with grill marks.

4. Finish

  • Transfer to a serving dish.
  • Drizzle with melted butter and sprinkle with chopped herbs.
  • Serve with lemon wedges for a fresh squeeze of flavor.
